Duncan Manley
Duncan Manley is a well known consultant to the biscuit industry.
He started his career in food by working for J Rank, the flour millers
and then, in 1967, he joined Chiltonian Biscuits in London as Technical
and Development Manager. In 1973 he was promoted to Technical and
Buying Director with Chiltonian.
In 1977, Duncan moved to Baker Perkins as Research Manager with
the biscuit division.
In 1981 he established Duncan Manley Ltd, consultants to the biscuit
industry internationally. While running this company he has written
two books and six manuals on biscuit technology. His Technology
of Biscuits, Crackers and Cookies was first published in 1983
and is still selling well in its 3rd edition.
In 1991 he formed the Cambridge Biscuit Seminars, which ran teaching
seminars three times per year for seven years. These were attended
by delegates from 97 companies in 38 countries.
The Biscuit Doctor aims to continue his desire to share
his knowledge and experience in biscuit making with others in this
industry.
